now that it’s almost spring, how about a perfect winter meal! 😉 i love a good pot roast, especially with some fresh-baked bread to sop up the juices. below is my favorite crockpot version that is easy to throw together and always turns out tender and delicious!

to begin, you’ll need:

  • a 3 to 4 lbs. chuck roast (or whichever cut of meat looks best to you that day)
  • 2 T. olive oil
  • random herbs
  • 1 12 oz. bag of new potatoes
  • 1 lb. of baby carrots
  • 1 onion
  • 1 envelope of dry onion soup mix
  • 3 c. of water

I start this roast by browning my meat in a pan before tossing it into the crockpot.  Heat the oil over medium-high heat and sprinkle the roast with whatever herbs you like or have on hand.  The last time I made this, I believe I used some salt, pepper, thyme, rosemary, and bay leaf.   Brown the meat in the hot oil for just a couple of minutes on each side to get a nice brown color going.  Once it’s browned, place the meat into the crock pot along with the carrots, potatoes, and the onion (quartered).  Add in the water, then sprinkle in the soup mix and stir.  Cover and set the crockpot to Low.  Cook for about 8 hours then enjoy this warm filling roast deliciousness!
