blueberry muffins

blueberry muffinsA delicious blueberry muffin recipe to try!

To start, you’ll need:

  • 1 stick of butter
  • 1 and 1/4 c. sugar
  • 2 eggs
  • 2 c. flour
  • 2 t. baking powder
  • 1/2 t. salt
  • 1/4 c. milk
  • 1 pt. blueberries
  • white sugar to sprinkle

Begin by preheating your oven to 375 degrees.  Prepare your muffin tin by greasing the cups or by placing foil muffin cups in the tin.  Make sure you grease well, if not using cups, so that the muffins won’t stick and break apart upon removal.

Cream the butter and white sugar together in a large mixing bowl.  Add the eggs one at a time and mix well.  In a separate bowl, mix together the flour, baking powder, and salt.  Begin adding the flour mixture to the creamed batter a small amount at a time.  Alternate adding the flour with adding the milk.  (Add a little flour, mix, add a little milk, mix, add a little flour, mix… and so forth.)  Once everything is mixed, you will have a fairly stiff batter. Fold in the blueberries, and don’t worry if a couple of them break.

Fill the muffin cups (this recipe makes about 12) then sprinkle just a pinch of sugar on the tops of each muffin.   Bake for 30 minutes.  Remove from the oven and let cool for about 15 minutes before removing from the pan.  I like to use a small butter knife or spatula to slide along the sides of each muffin helping it loosen and lift out of the tin.  Enjoy!
